Red Pepper Mango Cilantro (Non-fat)

My new FAVORITE dressing!

~ 4 mangoes (I prefer Atualfo for sweetness)

~ 1 red pepper

~ Handful of cilantro

Mix in your blender or Vitamix and pour on your salad.

Papaya Lime (Non-fat)

~ 1/3 of a papaya

~ 1 lime

Mix in your blender or Vitamix and pour on your salad.

I like it on a butter lettuce salad with corn, green onions, tomatoes, and a little avocado

“Creamy” Sweet Corn Dressing (Non- fat)

This dressing is PERFECT if you have used up your fats for the day, and still need something delicious on your salad.  I like it on a salad of romaine, arugula, and kale.

~ 1/4 of a lemon (juice)

~ 1 T of green onion tops

~ 1/4 ear of sweet corn (off the cob)

~ 2 pitted dates (soaked in water 20 minutes or more)

~ a little water from the soaking the dates

Blend all the ingredients together, and pour over the salad.

Tahini Thai Dressing

~ 1 T of tahini

~ 1 tsp ginger

~ 1/2 lemon (juice)

~ 2 ounces of coconut water

Blend all together, and pour over the salad!

Almond Butter Bliss Dressing (click on the title for the photos)

~ 1 T raw almond butter

~ 1/2 lemon (juice)

~ 2 ounces of coconut water

~ optional – add 1 tsp of ginger

~ optional – slice of red pepper for some ZING!

This dressing is INCREDIBLY delicious with or without the ginger, so go whichever way sounds better to you!

Lime Garlic Pistachio Dressing

~ 1/8 cup of pistachios (preferably raw)

~ 1/2 lime (juice)

~ sliver of garlic

~ 1 ounce of coconut water

~ cilantro (1 Tablespoon)

Blend all in your blender and pour over salad.

I like it over butter lettuce and romaine!

Mango Lime Fiesta Dressing  (click on the link for photos)

Ingredients:

 

~ Frozen mango (if can’t find fresh right now)
~ Yellow Lime – 1/4 to 1/2 (yellow = ripe, just learned this, and I’m a believer now!)
~ Basil – 2-3 large leaves
~ Guacamole – 1 packet (I buy the little packets from Costco)

 

Blend all ingredients in the Vitamix with about 1/2 cup of water to help it blend nicely.

 

It’s soooo super delicious!

 

This made enough for two large salads!
