“Creamy” Sweet Corn Dressing (Non- fat)
This dressing is PERFECT if you have used up your fats for the day, and still need something delicious on your salad. I like it on a salad of romaine, arugula, and kale.
~ 1/4 of a lemon (juice)
~ 1 T of green onion tops
~ 1/4 ear of sweet corn (off the cob)
~ 2 pitted dates (soaked in water 20 minutes or more)
~ a little water from the soaking the dates
Blend all the ingredients together, and pour over the salad.
Note: This is NOT a great food combo as far as digesting – dates and corn. Use sparingly 😉
