Raw Taco Salad
~ 1 ear of raw corn (or more)
~ cherry tomatoes, cut in half
~ ground in a food processor: 2 cups of kale, 2 cups of arugula, 1/4 cup of cilantro, 1/4 cup of green onion
~ 1 cup of pineapple, (thaw if frozen right on the salad, letting the juices flow all over it 🙂 )
~ 1/2 a small lemon (juice)
~ 1/2 a small avocado
~ 6 cups of romaine, half of it shredded, the other half displayed as beautiful leaves
~ celery, cut small for a little extra crunch, if desired
No dressing needed on this salad. The pineapple and tomato make a great combo!
Basic Salad with Persimmon Dressing
~ lettuce and spinach, lots
~ tomatoes and 1/2 avocado or less
Persimmons (3) for dressing
Super simple and super yummy!
