Blended Red Pepper Mango Soup

Base to blend (also a tasty dressing!):

4 mangoes

1 red pepper (small to medium)

Handful of cilantro

Toppings:

Avocado

Cucumber spiralized (picture below)

Grape or cherry tomatoes

Green onions if desired

I’m getting to the point where I could live without the avocado, or try hemp seeds, or very little avo.

Amazing! I never thought this day would come!
