2 or 3 mangos
1 cucumber (half to spiral as noodles if you like, and half to blend as the soup)
Blend above ingredients in blender (only half the cucumber gets blended)
Cut up avocado, chives or green onion, and more mango bits to top.
I spiraled cucumbers and zucchini for noodles cuz I was in the mood 🙂
Notes: Cucumbers make a really refreshing, light crunchy noodle, where as the zucchini noodles are thicker and crunchier. I’ve gone through different seasons with my preferences here.
Use a Spiralizer to make your raw noodles. They are inexpensive and worth it when you are looking for something different to change it up.
